Distinct notes emerge at first—balanced and sweet, with a character that sits between fruitiness and berriness. The aftertaste, however, carries a soapy astringency that persisted across multiple recipe iterations. I used lower brewing temperatures (87–89 °C) with an Aeropress or Origami/Deep27, at a brew ratio of 1:15–1:16.
