The aroma was sweet and pastry-like but perhaps a touch generic at first. As the coffee opened up, delicate stone fruit notes appeared. Hint of strawberry too. Later, the sweetness and the stone fruits intensified. Juicy peach and nectarine notes came to mind. Bit of cotton candy-like sweetness too. As the coffee approached room temperature, grassy oolong tea notes appeared as well. The flavor profile was crisp and bright but, like the nose, somewhat genetic initially. As the coffee sat, stone fruit notes appeared here too. Super juicy and sweet peach and nectarine notes came to mind. Some strawberry was noticeable as well. Oolong tea was detectable in the center. Bit of lemony acidity. More stone fruits and sweetness on the back end and the finish. Some drying, green tea-like tannins lingered after the swallow. All in all, exceptionally high sweetness in both the aroma and the flavor. Medium to medium-high acidity in both. Outstanding juicy, medium-light bodied mouthfeel. Creamy and supple on the palate. This Copa de Oro Pink Bourbon drank like a super juicy and sweet, washed Panamanian Gesha and was one of the best coffees I have tried all year. After sampling this green in an ultra-light roast profile from both September and Thankfully, I can say for sure that the September version was by far my favorite.
