The aroma was pretty nondescript initially. Slightly herbal. A hint of sweetness emerged as the coffee sat. Bit of stone fruit character as well. With time, delicate peach notes came forth. Moderate amount of herbality too. The peach presence and the overall sweetness intensified later. A touch of juicy strawberry was also noticeable. The flavor profile was similarly mediocre at first and didn’t have much going on. Slightly herbal up front. Fair amount of lemony tartness in the center. Touch of tea-like tannins on the back end and the finish. As the coffee cooled, subtle stone fruit notes appeared. Hint of sweetness. With time, the sweetness became more pronounced and was somewhat candy like, but in a rather toned down manner. Subtle strawberry notes were also detectable. Later, the strawberry intensified. Overall, medium to medium-high sweetness in the both the aroma and the flavor. Medium to medium-high acidity in both aroma and flavor. Excellent creamy, lush, medium-full bodied mouthfeel. This is a very delicate coffee that continued to improve as it opened up. Be sure to give these beans a substantial rest and have a patient palate when enjoying your cup.
